The present project is related to the construction of a dairy plant in the village of Zavala, Breznik municipality with a capacity to process 1000 liters of raw sheep's milk per day. The investment intention of the applicant provides for the construction, installation and purchase of technological equipment for the purposes of the production process. The main raw material for processing will be sheep's milk obtained from the own farm of the investor, which is in close proximity, and currently there are about 250 shepherds of the Lakon breed who in the next two years will become 600 -700.
According to the elaborated technological project, the specialized processing company of sheep milk is focused on the production of high quality and ecologically clean dairy products according to established technologies. It is envisaged that the newly built complex will have all the necessary resources for the adequate and full satisfaction of the envisaged activities for the production of yellow cheese, white brined cheese, yoghurt and cottage cheese. The optimal conditions for production, quality assurance and storage will be ensured for these types of assortments (dairy products) according to the technological parameters and the sequence of the operations indicated by groups of dairy products in the design documentation.
