The project proposal envisages the purchase of technological equipment for a workshop in the village of Gradina, municipality. Parvomay, region Plovdiv. The aim is to develop innovative technology in the production of probiotic yogurt with dried fruits and honey. with reg.№2675 of the Patent Office of the Republic of Bulgaria.The specified equipment allows the drying to be carried out at a temperature not higher than 420 C, which ensures maximum preservation of the organoleptic and biological value of the fruit. The new technology allows obtaining a new product that has superior nutritional and biological value and innovation in the approach of creating and combining the raw materials used.The main raw materials for production fall within the scope of the sensitive sectors - cow's milk, fruit and honey! The room in which the production will be located is for rent, for which a contract has been concluded. It is also planned to install a wastewater treatment plant from the production. The manager of the company is academician Maria Baltadjieva, an internationally recognized scientist in the field of technological science and practice for dairy products.Under her leadership, a rich collection was created containing varieties of associations of lactic acid bacteria at the heart of which is the unique Bulgarian stick Lb. bulgaricus. The company has developed technologies and produces lyophilized starter cultures for dairy products - Bulgarian yogurt, white brined cheese and more. Milk media from fresh natural milk and associations of strains of lactic acid bacteria isolated from traditional dairy products of ecologically clean, mountainous regions with proven high activity are used for the production of starter crops.
