Breaded food products are one of the most preferred both due to their excellent sensory characteristics and due to the short preparation time. For this reason, their demand is constantly increasing. In accordance with the new trends related to the intake of healthier foods, the need to develop new compositions of breading mixtures is increasing, which are suitable for people with health problems, for whom this type of food is limited. On the other hand, it is important to reduce the fat content in the product and increase their stability. For this reason, the aim of the present study is, on the one hand, to seek new approaches for technological processing of food products and to investigate the introduction of new ingredients or biologically active components in breading mixtures, so that they have a potential health effect on the health of the consumer.
