Description

Brief description 
Панираните хранителни продукти са едни от най-предпочитаните както поради отличните си сензорни характеристики, така и поради краткото време за приготвяне. Поради тази причина търсенето им непрекъснато нараства. В съответствие с новите тенденции свързани с приема на по-здравословни храни нараства нуждата от разработване на нови състави на панировъчните смеси, които да са подходящи за хората със здравословни проблеми, за които този вид храни са ограничени. От друга страна, е важно намаляване на съдържанието на мазнини в продукта и повишаване на тяхната стабилност. Поради тази причина, целта на настоящото проучване от една страна е да потърси нови подходи за технологична обработка на хранителните продукти и да изследва влагането на нови съставки или биологично активни компоненти в панировъчните смеси, така че те да имат потенциален здравословен ефект върху здравето на консуматора.
